These peanut butter cookies are amazing. THREE easy ingredients and you are on your way to the most amazing peanut butter cookies. And as an added benefit, they are gluten free. That’s actually how I found about this recipe. We are a gluten intolerant family. If you have tried our slow cooker macaroni and cheese or our two ingredient fudge, you know I’m always looking to keep food simple, but still delicious.
These are so yummy dipped in milk or hot tea on a cold afternoon. I have so many fond memories of baking in the kitchen with my grandmother as a child. I was worried when I first found out we were gluten intolerant that we wouldn’t be able to eat cookies made with wheat flour. I was so glad to find this gluten free alternative to one of my favorite cookies.
Peanut butter cookies
Ingredients:
- 2 cups peanut butter *These have turned out much better with peanut butter that is not natural.
- 2 eggs
- 2 cups sugar
Directions:
- Preheat oven to 350*
- Mix ingredients well, until smooth
- Drop spoonfuls of batter onto a greased cookie sheet and bake for about 10-12 mins
- Try not to over bake. These cookies are amazing when they are still a little soft.
