So Valentine’s Day is right around the corner, and I wanted to make these Red Velvet Whoopie Pies so badly! I saw them on Brown Eyed Baker, and they are delicious! However, please note, these did not turn out super moist like my friend Laura’s! These are more like a cake whoppie pie! We altered the recipe only slightly, which I’ll include below and used the canned cream cheese frosting for the center! Ingredients:
- 3 cups all-purpose flour
- 1/3 cup cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup butter (room temperature)
- ½ cup vegetable shortening
- ½ cup light brown sugar
- 1 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3 teaspoons red food coloring
- 1 half and half
Directions:
1. Preheat oven to 350 degrees, and cover several cookie sheets with parchment paper.
2. Mix sugars (brown and white), butter, and shortening in mixer until creamed.
3. In a separate bowl, combine all other dry ingredients.
4. Add eggs one at a time, then vanilla and food coloring.
5. Add dry ingredient mixture and half and half (you may want to do this little by little, otherwise it gets pretty dusty)!
6. Use a melon baller or cookie scoop to place 2Tbsp. sized drops on the cookie sheet.
7. Bake for 10 minutes or until they spring back to the touch.
8. Spread with cream cheese frosting (we bought canned frosting) and place two pies together!
