So, I’ve been wanting to make a Frittata forever, ever since my sister-in-law (he queen of cooking) made one several years ago. Yes, I’m just now getting around to it! So, we took a recipe we found and totally changed it to our liking and it was AMAZING! Check out the details below!
Ingredients:
- 3 Tbsp. Olive OIl
- 2 Tbsp. Butter
- 1 Cucumber (or Zucchini)
- 1 Tsp Garlic Powder (or 1 clove chopped garlic)
- 1 Tsp Onion Powder (Or 1/2 C chopped onion)
- 1 C frozen spinach (We use one of the smaller frozen blocks)
- 2 Cups cooked spaghetti
- 2 Tbs. Milk
- 10 large eats (beaten)
- 3/4 C shredded Mozzarella
- 1/4 Parmesan cheese
Directions:
1. Preheat oven to 400 degrees
2. Heat oil and butter in a skillet.
3. Cook onion, garlic & cucumber over medium heat.
4. Once these are tender, add in spinach and cook until some of the water has boiled off.
5. Add in cooked spaghetti and blend mixture.
6. Beat eggs, milk, 1/2 tsp. salt and pepper (to taste – I used 1/4 tsp.) and pour over mixture in skillet (mix thoroughly).
7. Place immediately into a casserole dish and bake in oven for 20-30 minutes!
