If you are a sugar addict like me, then you are going to LOVE this recipe! Just so you know, this is NOT necessarily a casserole, but more like sweet potatoes in a carmelized sauce which makes them UBER SWEET! This recipe makes enough for our large family dinner with 20 people.
Ingredients:
-2-3 lbs. of sweet potatoes
-1 stick of butter
-1 bag of mini marshmallows
-1/2 pound of brown sugar (up to one whole bag depending on how sweet you like them).
Directions:
1. Melt the butter in a skillet over medium heat.
2. Stir in 1 cup of brown sugar and keep adding brown sugar until you have a medium consistency.
3. Bring that mixture to a boil.
4. Drain juice off the sweet potatoes, and gently put them in the syrup (otherwise they will break up) and fold the brown sugar mixture over the sweet potatoes and bring the mixture back to a boil.
5. Once it’s boiling, reduce to simmer and then put in a casserole dish, cover with marshmallows and place them under the broiler until top is brown (be VERY carful, because marshmallows are very flamable!).
Variations:
-Depending on how sweet you like it, you can add less brown sugar.
-Add chopped walnuts or other nuts
-Stir in marsmallow while it’s simmering if you want the gooey kind!
