Summer is staying up late and sleeping in. Summer is sunscreen and sunburns. Summer is messy, leaky ice cream cones and running barefoot through the sprinkler.
Summer is……OVER?!
I can’t believe it, it happened so fast.
But school is back in session. My ”baby” is a High School Junior.
I just sent my oldest off to college 4 hours away! (I still can’t believe it. It’s such a weird feeling.)
I know it sounds so cliché, but time goes so fast.
That being said, there’s still time to celebrate.
Still time for a trip to the beach, for a Labor Day picnic, for cooler nights just chilling on the deck.
And, for those times, I have the perfect cocktail.
Similar cocktails are flying around Pinterest. This one is unique. It uses real fruit, not a juice concentrate. So much better, plus you have the ability to adjust the sugar content too.
So, I guess you could say this is a healthy cocktail?!
Raspberry Beer Cocktail
Combine 1 cup lemon juice, ¾ sugar and 1 ½ cups raspberries in a saucepan. Bring to a boil, boil for 2 minutes (or until sugar is dissolved) and remove from heat.
It doesn’t take the mixture long to come to a boil. I boiled over medium heat. After sugar has dissolved, remove from heat and cool thoroughly.
Pour juice through strainer to remove seeds and pulp. Throw seed/pulp mixture away, unless you can find a reason to keep it? This is your raspberry-lemonade concentrate. So much better than the frozen concentrate. Less sugar, real berries….and, not really too hard to make.
In a large pitcher or container, add ½ cup vodka to raspberry-lemon juice concentrate. Stir thoroughly. Add 4 beers. Your choice on what brand, as you can see I used Miller Lite. Pause for a moment until the foam subsides, unless you like foamy drinks and foam mustaches!
Fill 4 glasses with ice. Garnish with lemon slices and fresh raspberries. Cheers!

Step 1: making the juice concentrate
1 cup fresh squeezed lemon juice
¾ cup sugar
1 ½ cup fresh or frozen raspberries
Combine lemon juice, sugar and raspberries in a saucepan. Bring to a boil, boil for 2 minutes (or until sugar is dissolved) and remove from heat. Pour juice through strainer to remove seeds and pulb. Throw seed/pulp mixture away. Cool juice completely.
Step 2: making the final cocktail
Raspberry-Lemon Juice Concentrate(recipe above….)
½ cup vodka
4 beers
fresh raspberries for garnish
lemon slices for garnish
In a large pitcher or container, add ½ cup vodka to raspberry-lemon juice mixture. Stir thoroughly. Add 4 beers.
Fill 4 glasses with ice. Pour beer mixture into glasses. Garnish with lemons and fresh raspberries.
