Ingredients:
6-8 Slices Turkey Bacon, Cooked & Chopped
8 Eggs, Beaten
¼ cup low fat milk
2 Russet Potatoes, Sliced & Cooked (can also use canned sliced potatoes)
1 cup Shredded Cheddar Cheese
2 Slices American Cheese
¼ Tsp Garlic Salt
¼ Tsp. Onion Powder
½ Tsp. Black Pepper
Directions:
Melt 1 tbsp. of butter in a non-stick skillet over medium heat. Lay sliced cooked potatoes in skillet and brown lightly. Beat 8 eggs in a medium sized bowl and add milk, garlic salt, onion powder, black pepper and pour over potatoes. Add cooked chopped turkey bacon. Allow the egg mixture to set about half way and then add shredded cheddar cheese. Once egg is completely set, fold American cheese into triangles and lay on top. If you have an oven resistant skillet similar to the one in the picture, bake for about 10 minutes once eggs are half way set and add American Cheese for last 2 minutes or so.
Can be served for breakfast, lunch, or dinner! Also makes great leftovers. Freeze unused portions individual small freezer bags!
