This is one of the most amazing side dishes if you’re looking for something hearty but yummy! This Loaded Mashed Potatoes side dish recipe takes all of the best out of twice baked potatoes and makes it a cinch to whip up and serve!
For this recipe, you’ll need:
- 8 medium size potatoes baked *
- 2 cups shredded Cheddar cheese
- 1 (8 oz.) container french onion dip
- 1/2 cup milk
- 1/4 c. butter
- 2 minced garlic cloves
- 5 green onions, chopped
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 6 bacon slices cooked, and crumbled
To get started you’ll need to bake your potatoes. * A little trick that I have always used is to place the potatoes in a plastic grocery bag, with some water in the bottom of the bag, tie the bag at the top and place in a large microwavable bowl in the microwave. You’ll want to cook the potatoes for 3 minutes per potato. This saves the time of preheating the oven and takes a lot less time in general.
Next, coarsely mash the potatoes. Chop your chives, but reserve about 1 chive worth for the top of the dish when ready to be served. Add chives and butter to the potato mixture.
Stir in 1 cup of cheddar cheese, and all of the other ingredients.
Spoon in to a lightly greased 9×13 baking dish. Bake at 350 degrees for 30 minutes. Top with cheese and remaining chives.
