Today I was so excited to try out a recipe for Zucchini Tots! I had pinned this to my Pinterest page, and it went to a dead link. So, I researched a few different recipes, and came up with one that would suit my pregnancy needs (mainly heartburn)! I adapted the recipes from Skinny Taste and Emily Bites. These were so easy to make, and were literally gone within the afternoon! These were really easy to make, and I’m always looking for a new way to put veggies in as many recipes as possible!
Ingredients/Substitutions:
- 1 C shredded zucchini
- 1/4 C onion (I used onion powder to prevent heartburn)
- 1 egg
- 1/4 C plain bread crumbs
- 1/4 C shredded cheese (I made two batches, one with shredded cheddar and one with grated parmasean, and hubby and I both preferred it with cheddar, but this is up to you)!
- We also added 1/4 tsp of Old Bay that was not included in any of the original recipes, so this is optional!
- 1/8 tsp salt (I did not include salt because of all the swelling I’m having right now!)
- 1/4 tsp pepper
Directions:
1. Preheat oven to 375 degrees.
2. Shred zucchini with grater. You can pat zucchini dry or drain excess water.
3. Grease mini muffin pan with no stick spray. These babies stick, and even with the non-stick spray, I still had to soak the pan!
4. Combine the rest of the ingredients with zucchini and spoon into mini muffin pans. I used my cookie dough scooper!
5. Bake for 16-20 minutes depending on your oven until they are brown. Also, give them a few minutes to set up before serving!
*Tip: It helps to really fill the mini-muffin pan and pack as much into each one as possible to make them nice and thick.
I used the large grater holes for mine.
My tip for these is to pack as much into the tin as possible. The more packed they were, the easier they came out of the tin! Check out our instructional Zucchini Tot video below!

This recipe looks yummy and I don’t know that most people would realize it’s healthy. I am allergic to onions, so usually leaves them out of recipes but could use the onion powder in limited amounts. I can’t wait to try this! 🙂
