I have been so busy heading back to work with the baby, it has been really hard to eat healthy. However, hubby and I just sat down yesterday and made a list of all the healthy foods we are going to cook in the new year. We even made a grocery list, which makes me feel like I’m actually completing steps toward my goal. Lunch is definitely my hardest meal of the day to stay healthy because I’m at a different school several days a week. Teachers have very little time for lunch break, and usually I have a 30 minute window to get lunch ready and eat. So to combat this problem, I always eat foods that are quick, but don’t want to sacrifice taste! You can see my desk above, and this is my lunch view every day at either of my schools! I eat at my desk by myself while trying to work finished.
I love to have some flavor at lunch, and the taste of these soups are definitely delicious. My husband ate one of them within the first hour we bought a few of these! He gave his seal of approval for taste, speed (of cooking), and cost. We both work in schools that don’t have cafeterias, so packing lunch is our only option. There are several flavors to choose from, and I tend to want the lunch process to be easy, so I do pack the same items most days. Different flavors allow me some variety each day!

As I was shopping I tried to pick a few items that were good compliments to my soup, and I have to admit, I can’t eat soup without crackers. This is a must in our house! I’m trying to boost my fruits and veggies too, so I added those as sides to my lunch. Do you have to have crackers with soup too?
Cooking directions:
Stove: Heat gently over medium heat in saucepan, stirring occasionally.
Microwave: Microwave ovens vary. Time is approximate. Uneven microwave heating may cause popping, movement of the container and/or splattering.
- Discard plastic cap; carefully remove and discard metal lid. Cover with microwavable plastic wrap.
- Microwave on HIGH 2 minutes. Let stand in microwave 1 minute. Carefully remove from microwave, grasping container on both sides with potholders. Stir before serving.
Note: After tasting, if you like warmer soup, heat an additional 15 seconds.
