My grandma and I made these Christmas cornflake cookies every year of my life until I was in my twenties. In fact my sisters are going over to her house to make them again this year, and I made them for my cookie swap with my girlfriends. This is one of my FAVORITE recipes, because they taste so good, and they are so colorful. These brighten up any holiday cookie tray. While trying to maintain a debt free Christmas, I still love making memories with traditions like cookie baking. Also, these are easy to make and freeze ahead, which we talked about in 10 Ways for a Stress Free Christmas.
::Tools/Supplies:
- Double boiler
- Wax Paper
::Ingredients: (You will need to make TWO batches if you are doing both red and green)!
- 180 mini marshmallows
- 1/4 C butter
- 1 tsp vanilla
- 1 tsp (red or green) food coloring
- 2 1/4 C corn flakes
- Red and green dusting sugar
::Directions:
1. Place marshmallows, butter, and vanilla in the double boiler and bring water to a boil. Stir until marshmallows are completely melted and then add food coloring. Stir in food coloring until the color is well blended.
2. Stir in corn flakes little by little until they are completely covered with color.
3. Spoon cookies out onto wax paper and let them set-up.
4. Dust with the opposite color dusting sugar (red on green or green on red).
5. Storage: Layer these in some sort of square or rectangular container (Tupperware style is good), and store in freezer until ready to use. These need about 30 minute to come to room temperature.
