I have been so busy heading back to work with the baby, it has been really hard to eat healthy. However, hubby and I just sat down yesterday and made a list of all the healthy foods we are going to cook in the new year. We even made a grocery list, which makes me feel like I’m actually completing steps toward my goal.
We are going to share one of those quick lunch recipes with you, at the end of this post! One of my main goals is to maintain portion control and add more fiber and protein to my diet. - (1) container of Minute Ready to Service Rice (I chose Brown Rice).
- (1/2) can of Tuna
- (1) 8oz. of Black Beans (drained)
- ⅛ tsp of Old Bay
- Microwave Minute Ready to Service Rice according to package directions.
- Open and drain black beans. Mix in desired amount.
- Open and drain one can of tuna. Mix in one half of the can.
- Add Old Bay.
