Instant Pot Chicken Fajita Soup is one of my quick, favorite meals for any season. It’s healthy and our family all loves it. I’m an avid Instant Pot user, and have used ours extensively since we first bought it. Meals are done very fast, and there is very clean-up involved. It saves me time, money, and effort. One of the best features is that you can cook from frozen as well. My boys love this Instant Pot Chicken Fajita Soup, and we often sprinkle crushed up tortilla chips on the top as well.
Prep: 10 Minutes Cook: 20 Minutes
Serves: 6
Ingredients:
- 1 tablespoon olive oil
- 1 white onion; sliced into rounds
- 1 red bell pepper; sliced into strips
- 1 green bell pepper; sliced into strips
- 1 large chicken breast
- 1 package fajita seasoning
- 28 oz chicken broth
- 4 to 6 cups water – to fill line
Once you have all of your ingredients assembled, you are ready to roll with this recipe. Grab your Instant Pot and let’s get started.
Instructions:
First, you will need to turn the Instant Pot on saute mode. Next, you will add in olive oil, then you can add in sliced onion.
Next you will need to add in the sliced bell peppers. Then saute for about three minutes.
You will then add the chicken breast on top. Frozen can be added for the same cook time you do not need to add more time.
You will need to pour in chicken broth and add in the water to the fill line. At this time you will add the entire packet of fajita seasoning. Stir it well and turn off saute mode. Place the lid on the Instant Pot and turn the valve to the sealed position. Press the manual or pressure cook button and set to 20 minutes.
Finally, after the timer has counted down and beeps, release the pressure. You can serve this meal with a side of tortillas, sour cream, and cheese of choice. However, it’s just as good with just the soup.
