I love pasta as a fall back meal when money is tight! What a great way to save money, and now with all the whole grain pasta options, its much more healthy! Try our recipe below, and let us know what you think!
Penny Pinching Pasta
1 lb. Whole Grain Penne Pasta
3/4 lb. Ground Turkey Sausage
1/2 Jar Prepared Spaghetti Sauce (or to desired taste)
Sliced Pepperoni
Small diced white onion
1 clove minced garlic (or 1/2 tsp. prepared)
1 tsp. Garlic Salt
1 tsp Black Pepper
1 tsp. Italian Seasoning
1/3 cup grated Parmesan Cheese
1/2 lb. shredded Mozzarella Cheese
Directions:
1. Boil pasta according to package directions, drain, but keep a little water in pot and add a splash of olive oil. Don’t forget to salt your pasta water.
2. Brown turkey sausage, drain, and add minced onion until softenend. Add minced garlic, garlic salt, black pepper, and Italian seasoning.
3. Combine pasta and sausage mixture until well mixed and then place in a casserole dish and layer it with the pepperoni and mozzarella cheese.
4. Sprinkle parmesan cheese on top and cover with foil.
*A nice tip is to spray the foil with a cooking spray before covering so the cheese won’t stick.
5. Bake at 350 degrees for 25 minutes or until cheese is nicely melted on top. You can remove the foil if you like a “crusty” top.
