For Valentine’s Day I wanted to do something special for hubby, since we just found out he has diabetes. There are a limited number of sugar-free treats, but Pillsbury makes these Sugar Free Brownies, and so I decided to make these Valentine’s Day Brownies for hubby. These are so easy to make that I thought I would share on the blog. Since there are only so many things you can do with brownies, I decided to use our heart shaped cookie cutter to create these adorable brownie hearts.
This has been my favorite holiday since I was a little girl, and even as an adult, it is still my favorite holiday. I think being a teacher makes it even worse, because the kids love it too. I just love it when they decorate their little bags to use as their “mailbox.”
I used a simple sugar-free icing recipe I found, and put it into an icing bag to ice the edges of the brownies. However, this could easily be made with regular brownie mix and store-bought red icing. I found the adorable red cake stand and cookie cutter at Target in their $1.00 bins (The stand was actually $5.00), but I will be using that for future birthdays, events, and blog posts.

Directions:
- Simply prepare your brownies as directed on the package, and allow them to thoroughly cool.
- Use a heart shaped cookie cutter to cut out the hearts.
- Prepare icing of your choice and place in a sandwich baggie. Cut a very, very tiny hole in the end of the bag, and twist the other end to use as an icing bag. You can also cover the entire heart in red icing as well. Since we are trying to stay sugar-free, I just outlined ours.
- Ice, place on tray, and eat.
Some tips for getting these to turn out just right:
- Make sure they are thoroughly cooled before trying to ice, otherwise, the icing will melt and drip everywhere.
- When cutting them out with the cookie cutter, make sure to cut thoroughly to the bottom, then gently push brownie through the cutter.
